Key Lime Kolsch

4.9% Originating from Cologne, Germany, Kolsch is a style of beer that is very closely related to pilsners and pale lagers in taste but is actually brewed with an ale yeast and fermented colder than ale yeast is used to.  The result is a very clean, straightforward beer.  The only twist is we brewed ours using Cascade Hops, which lend it a tad bit more hop backbone than traditional examples.

Citra Pale Ale

5.8% Crisp, light and brewed exclusively with Citra hops, this beer is extremely quaffable.  Just a hint of caramel malt lend a bit of malt sweetness and complexity to round out the experience.  

Belgian Dubbel

7.4 %  Brewed true to style with our Trappist yeast blend, our Belgian Dubbel tastes of toasted caramel with hints of banana. Smooth with a nice velvety & slick mouthfeel. 

CREAM ALE

5.3%  Light, crisp & easy-going. This ale is at home on a boat or at the beach.  American Fuggle hops lend a subtle spiciness that complements the blend of German Pale Ale & Pilsner Malt

European Wheat

5.9%  Crisp and clean with hints of dried lemon peel and coriander, this wheat ale has a subtle mineral flavor reminiscent of fresh mountain water.  Quite possibly the cleanest finish we've ever tasted, this wheat beer would be the perfect addition to a lazy summer afternoon spent under the Eiffel Tower or on the Mantanzas River.

Saison

6.8%  A nod to the traditional brewers of saison, ours is made predominantly with pilsner malt, but a touch of wheat helps round out this beer.  It boasts a satisfying and full body, yet is brightly carbonated.  Flavors of dried apricots and pineapple and a clean hoppy flavor seal the deal. 

Imperial IPA

9.1% So. Many. Hops.  We went old school and heavy handed with the hops for this beer. Columbus, Centennial, Simcoe and Warrior hops all gave up their essential hop oil to make this delicious and deceptively drinkable beer.  Smooth, balanced and dry, this beer will sneak up on you.

IPA

6.5%  Brewed exclusively with Galaxy and Mosaic hops, this IPA is packed with juicy hop flavors! Dry-hopped for a week ensures this IPA is bringing it's A game from the moment you smell the aroma to last drop.  Overall a juicy, vibrant hop aroma and flavor trapped in a straw colored IPA.

SMOKED DATIL CREAM ALE

5.5% Mesquite & Apple wood smoked Datil peppers (Native to St. Augustine) lend a lightly smoked and robust heat to this otherwise light beer.

American STOUT

5.6 %  Big roasty flavors abound in this stout.  A bit more robustly hopped than our Oatmeal Coffee Stout, this beer has a nice even keeled body that makes it go down easy.

 


Past Beers

I-Peach-A

6.0 %  We stole some of our Citra Pale Ale and added nearly 10 lbs of fresh peach flesh per keg and let the beer undergo a second fermentation.  The resulting beer has an elegant orchard and farmhouse character that pairs wonderfully with the Citra hops.

Gose

3.4%  A bit salty & sour with a touch of coriander and brewed with loads of wheat, this beer is a as refreshing as it is unique. Gently hopped with German Hallertau Mittelfrüh hops and low in alcohol, it's a welcome addition to our always rotating draft list.

Biere de garde

6.8%  Fermented with our European Ale yeast, this traditional ale is refreshing, with a mild malt sweetness upfront that quickly gives way to a dry and thirst quenching finish.  Mild notes of fresh biscuits and caramel make this a complex amber ale that is extremely quaffable. 

SESSION IPA

4.2% Light in body but big on Cascade hop flavor and aroma.  A ridiculously sessionable beer that'll make you forget it's only 4.2%

OATMEAL COFFEE STOUT

5.9 %  Made with coffee roasted just across our street at Third Wave Coffee, we aged the finished stout on 3 pounds of whole beans that were roasted just hours earlier.  We used Brazilian Beans roasted at three different levels to encompass as large of a range of complex coffee flavors as possible.  The nose on this beer is simply other worldly.  Once you get into the beer, subtle flavors of chocolate and a light roastiness round out this beer.

Blueberry Wheat

5.9%  We stole some of our European Wheat and rested it on blueberry's for a week as it finished fermentation.  The result is a spritely, crisp and mildly-tart wheat ale that is nice and refreshing.  It's a small batch so it won't last long. 

Watermelon Gose

3.4%  We took our Gose and added over a half pound of fresh cut watermelon per gallon for this batch.  The sweetness of the fruit mellows out the brininess of the gose for a unique experience.

AMBER RYE

5.6%  A supremely well-balanced Amber Ale, the Rye & Caramel malts add an earthiness that complements the subtle hop character.

Mango Saison

6.5% Nearly 50 pounds of mango went into this ale, resulting in a farmhouse ale with a tropical twist.  Flavors of ripe mango are nicely enveloped by the rustic saison yeast for an extremely refreshing and balanced beer.

cocoa vanilla STOUT

5.9 %  Aged for two weeks on ground cocoa nibs and whole vanilla beans, this stout has vanilla on the nose, and chocolate on the pallate. Easy going and not overly sweet, it could very well be a sessionable dessert beer.

Raspberry Wheat

5% Quite possible the embodiment of summer in a glass!  Extremely light and effervescent, this beer pours a delicious peach-rose color and a simple hop schedule let's the raspberries steal the show.

BELGIAN IPA

6.2% Brewed using our Saison Yeast, this IPA is bittered and dry hoped exclusively with New Zealand hops delivering a bright hop character balanced against a somewhat spicy yeast character. 

SESSION IPA w/ mango

4.2% We took our Session IPA and aged it on fresh Champagne Mangos for over a week for a smooth and balanced beer.  The mangos won't overpower the hop flavor but actually help give the beer a more full body.

Imperial RED RYE

8.6%  We took our Red Rye and turned the volume up!  This Imperial version boasts a huge malt body and a slick, yet balanced mouthfeel.  The hops are a bit restrained allowing the subtle notes of chocolate and toasted malts from black patent and pale chocolate malts to really shine through .  The rye adds a subtle earthiness that blends especially well with the dark malts.

Sour Orange Saison

6.5% A super small batch, we took our same Saison yeast blend and added local sour oranges as fermentation finished.  Tart, citrusy and flavors of pungent oranges abound in this hyper local Saison.

SESSION IPA

4.2% Light in body but big on Cascade hop flavor and aroma.  A ridiculously sessionable beer that'll make you forget it's only 4.2%

Papaya IPA

6.2%  We took our Belgian IPA and added 6 pounds of Papaya per barrel.  The resulting beer has a subtle fruit character and sweetness that mellows out the hop character quite nicely..

OATMEAL COFFEE STOUT

5.4 %  We teamed up with Old City Brew for a custom roast for the third iteration of this beer. We aged the finished stout on 4 pounds of whole beans that were roasted just hours earlier.  The beans de-gased right into the beer!  The nose on this beer is simply other worldly.  Once you get into the beer, subtle flavors of chocolate and a light roastiness round out this beer.

Peach Saison

6.2% Fermented with a blend of Saison Yeast strains and nearly 50 pounds of peaches, this rustic ale has a fuzzy, farmhouse peach aroma and a spritely and distinctively Belgian flavor.

BRown ALE

5.5%  Brewed with liberal amounts of brown and pale chocolate malt rather than black malt, this Brown ale is ridiculously smooth with the perfect balance of a nutty maltiness.

Cocoa nib & chipotle stout

5.4% We stole just a little bit our stout and rested it on Whetstone Cocoa Nibs and Chipotle peppers.  The result is a velvety and chocolatey beer with just the slightest smokiness from the peppers. 

Witbier

6.0% A very traditional representation of the style, our Witbier has a voluminous body that belies the light citrus flavors.  We finished it all off with a touch of Coriander and Sweet Orange Peel.

Saison de canneberges

7.2% We added forty four pounds of cranberry puree during fermentation to add a tart and crisp finish to this saison.  Very smooth with notes of white pepper and clove. 

Ginger Pale Ale

5.4%  We brewed a light bodied pale ale with a restrained hop character to let the 13 pounds of fresh grated ginger really shine through.  Extremely satisfying to drink and a real thirst quencher. 

HOPPY WHEAT

5.9% Brewed with 50% Pale Wheat Malt and 50% Pale Ale Malt, German Hallertau Mittelfrüh hops and dry-hopped with Nelson Sauvin hops for a week, this wheat beer defies tradition with a supremely hoppy flavor, full body and crisp, dry finish.

BELGIAN BROWN ALE

8.6%  Dark and chewy flavors of toffee and roasted caramel mixed with a subtle yet crisp spice character, this beer boasts a smooth and enjoyable body that makes it hard to have just one.

DARK RYE IPA 

7.6%  Smooth and hoppy with just a touch of chocolate malt.  We dry-hopped this one with over a pound Chinook Hops per barrel.

SESSION IPA

3.9% Light in body but big on hop flavor and aroma.  A ridiculously sessionable beer that'll make you forget it's only 3.9%

IPA

6.4%  Brewed with 10 different additions of Cascade, Centennial, Mosaic, Chinook, Pacific Jade and Amarillo Hops & dry-hopped for 5 days, this IPA has a bright hop aroma and flavor all trapped in its’ straw colored liquid.

RED RYE

5.9%  Solid hoppy backbone with subtle notes of chocolate and toasted malts from black patent and pale chocolate malts.  The rye adds a subtle earthiness that blends with the dark malts.

OATMEAL COFFEE STOUT

6.3 %  We teamed up with Third Wave Coffee Roasters across the street for this delicious breakfast beer.  We aged the finished stout on Brazilian coffee beans roasted just a day earlier and the aroma is simply tantalizing.  Once you get into the beer, subtle flavors of chocolate and a light roastiness round out this beer.

PUMPKIN

6.4%  We simplified our Amber Rye recipe and added caramelized pumpkin puree and ground ginger, allspice, cinnamon and nutmeg.  A dry representation of the style that drinks like an amber but tastes like fall.

CHIPOTLE PORTER

4.8%  Brewed with seven different malts including Beechwood Smoked Malt & English Maris Otter and 4 pounds of Chipotles added to the boil kettle, this porter is spicy & smoky, yet neither too much of each.  Slightly sweet finish helps to balance the Chipotle spice.  

STOUT

6.8%  Big-bodied with a robust chocolate flavor this beer is a great one to finish the night off with.

CHIPOTLE CREAM

5.5% We took our easy drinking cream ale and added just a dash of Chipotle's to lend it a smooth, balanced smoky flavor and just a bit of spice.

DARK RED ALE

4.6% Deep crimson in color this red ale sports a nice roasty flavor upfront that washes away with a crisp hop balance from Chinook hops.  

CRANBERRY SAISON 

6.6% We blended natural, organic cranberry juice with our Saison and the result was nothing short of spectacular.  The bitterness of the cranberries perfectly balances the malt sweetness for a very satisfying drink.

SINGLE HOP IPA

6.0% Brewed exclusively with Pacific Jade hops this IPA has a subtle nose and flavor of tropical fruits and an efficient bitter finish.

BELGIAN IPA

6.0% Brewed using a blend of American & Belgian yeasts strains, this IPA has a great hoppy profile with flavors of dark fruits.

OAK AGED DARK RYE IPA 

7.6%  We saved just a bit of our Dark Rye IPA and rested it on oak for nearly three months.  The result is a beer with just a touch of fresh oak flavors and hints of vanilla to go with a great hoppy profile.  We dry-hopped this one with over a pound Chinook Hops per barrel.

OATMEAL COFFEE STOUT

7.2%  A big beer with big flavors of dark chocolate & a robust body from the addition of 50 lbs of oats.  Post fermentation, the beer was rested on a blend of Costa Rican & Ethiopian coffee roasted right here in town at Dos Coffee & Wine.

PEACH MANGO IPA 

6.0% We took 15 gallons of our single hop IPA and added over 10 pounds of fresh peaches and mangos during fermentation.  The result is quite possibly the quintessential Florida beer: fruity, unique and unconventional.

GRAPEFRUIT WHEAT

4.8%  We took our American Wheat and added over a pound of grapefruit peel per barrel of beer.  The end result is a summer ale with hints of grapefruit and sunshine.

DARK RYE IPA 

7.6%  Smooth and hoppy with just a touch of chocolate malt.  We dry-hopped this one with over a pound Chinook Hops per barrel.

AMERICAN WHEAT

4.8%  Light & crisp with a slight tartness from the cool fermentation and the abundance of wheat.

CHIPOTLE PORTER

5.4%  Brewed with seven different malts including Beechwood Smoked Malt & English Maris Otter and 4 pounds of Chipotles added to the boil kettle, this porter is spicy & smoky, yet neither too much of each.  Slightly sweet finish helps to balance the Chipotle spice.  

AMBER RYE

WHEAT IPA 

6.7%  Light and crisp with a citrus hop profile from Cascade & Centennial hops, this beer goes down easy with the hop backbone to bring it all together.
